Chicos are a traditional Northern New Mexico ingredient made by roasting and drying whole ears of sweet corn. The kernels are then removed, stored, and later soaked and simmered for cooking. They have a chewy texture and a rich, toasted corn flavor, commonly used in stews with pork, beans, or red chile. Our Chicos come in a 12 oz bag.
